I grew up on cereal. I feed my kids cereal. Why eat a grain-free breakfasts? My study started with Micheal Pollan’s Omnivorous Dilemma. Pollan describes the process for making shaped cereal– think Cherrie O’s, Lucky Charms or anything that is not natural shape. The grains are made into cooked slurry and poured into molds. Vitamins and minerals are sprayed on to these forms. Yummy! My husband took it to a higher level creating a chicken farm on our 20 acres. I just wanted to move away from empty breakfasts for my family.
Daddy Bacon Eggs
Our first try at ridding our house of the slurry cereal kick consisted of bacon, eggs, and homemade toast. With fresh eggs, we ate them every morning without fail. The Gioia Family loves bacon! We were at one point eating a pound of bacon each morning plus a dozen fresh eggs. Not a grain free breakfast, but a lot more protein, fat, and sodium. My husband gained the nick-name Daddy Bacon Eggs from my then 3 year son who loved the process of gathering the eggs and cooking them. Make Store Bought Cereal a Dessert for Breakfast
A big, cooked breakfast suited us for many years while the boys were young. This was our main family meal as Daddy worked at night. For most families this is impractical. Now that my boys are in school, breakfast is a speed event. Daddy now leaves early so it is just the boys and I. We do try to sit down and have breakfast for about 10 minutes. I want more for them than just a bowl of sugary grains with sprayed on vitamins. I tried making it a meal with “dessert”. If you ate protein and vegetables first, then a small bowl of cereal was a treat. This worked, if there was time; often we ran out of time.
As A Busy Home School Mom
OK this is not me, but Trisha of Intoxicated Life Blog. The line “as a busy homeschool Mom” caught me, because in “Tanya’s Fantasy Land” all home school mom’s have time to cook a wholesome healthy breakfast and discuss the day with their youngsters at leisure. Right? No frantic rush off to school with a bagel in one hand and a thermos of milk? No, time calls us all to account. Here is one of Trisha recipes.
Spinach Scrambled Eggs Served Over Fresh Tomatoes
1 Tbsp Coconut Oil
1/2 to 1 cup Spinach (Chopped)
1/4 of a small Onion (Chopped)
1/2 tsp. Garlic Powder
2 Eggs
2 Tomato Slices
Shredded Cheese (optional)
Instructions
- Saute spinach and onion together in coconut oil.
- Sprinkle with garlic powder.
- Whisk together 2 eggs.
- Pour over spinach and onions.
- Scramble eggs as normal.
- Place 2 slices of tomato on a plate.
- Put the spinach onion egg mixture on top of the sliced tomatoes.
- Top with cheese (optional), salt and pepper
